It's been super hot out lately so I thought I would make something fresh and cold !! Ceviche is raw seafood that is cured in citrus juices limes,lemons or oranges . I love ceviche but I seen these recipes for vegetable ceviche and I thought I would try this out but I changed the recipe to my own liking !
Recipe:
1 can chickpeas
1/2c sliced baby tomatoes
1/4c thinly sliced red onion
1/2 bell pepper
1 orange cut into cubes
1 avocado cubed
5 small mushroom sliced
1-2 corn on the cob (slice kernnes) or 1 can of corn
Dressing:
1/4 grapeseed oil or olive oil
2tbsp green onion
1/4 fresh lime juice
1tbsp lime zest
2 tbsp diced red onion
1-2 cloves of garlic optional (I just like garlic in everything)
1/2 fresh jalapeno diced
1/4c chopped cilantro
Salt/pepper
I started with the dressing, mix everything in a small bowl and let it sit.
Next rince beans under cold water in a strainer. Pour beans into a large bowl, add the rest of the ingredients and drizzle dressing over the vegetables. You can let it sit for a bit so all the flavors will combine. Or just eat it right away !!
