There is nothing special about this sauce its just a few ingredients and a bit of time and then you have a great tasting pasta sauce that goes with anything, from pizza sauce, spaghetti and meatballs, chicken parmesan, or even on zucchini noodles ! 

What You Need: 

3 cloves garlic 
1/2 tsp red pepper flakes (or more depending how hot you would like it)
1 tsp Fennel Seeds 
1tbsp oregano 
1-2tbsp sugar (optional) 
1 onion chopped 
1/4c. Olive oil
8c. Tomato sauce (make sure to use good quality brand it makes a difference) 
4-5 fresh basil leaves 
Salt/ pepper 
1/2c. Red or White wine 

Don't worry about chopping everything , I leave the onion chopped into big chunks and leave the garlic whole, because you will blend it at the end! 

Began to heat up your oil on medium low heat and add garlic, onion, red pepper and fennel seeds for about 5min. or till onions are translucent. (Be careful not to burn the garlic or it will taste horrible) 

Next add your tomato sauce , oregano, fresh basil and a good pinch of salt and pepper and your wine !

Now can also add sugar at this point , I don't because I like mine to taste a bit tart but if you don't add 1-2 tbsp of white sugar (or as needed by taste). Now simmer on low heat for 3-4 hours the longer you leave the sauce to cook the better it taste (that's the big secret) !!!  Make sure to check and stir it occasionally, and I like to keep the lid on half way so I don't get splatters of sauce everywhere ! 

When it is done make sure to taste it and check to see if it needs more seasoning, sometimes I like to add some rosemary, or add in some more fennel or salt , once it has cooled down blend it in a blender or use a hand blender and blend the entire sauce and your done ! 

Tip: I like to make a big batch of this so that I can have some on hand in the freezer !

They are full nutrients, high in protein, full of fibre, they are great source of calcium for people who don't eat dairy ! The list goes on ! 

There other morning I made this Chia bowl for breakfast, the amount that I made was quite a bit for me. I was pretty full I only ate about half, but it was great! 

This recipe is too easy to share: 


1/2c. Chia Seeds 
Half Banana sliced
Hand Full of Almonds Chopped
1/4c. Blueberries 
1c. Coconut Almond Milk (or any kind of milk) 

I took the chia seeds and almond milk poured it into a bowl and mixed, let it sit in the refrigerator over night, then mixed it again in the morning, it turns it into a thick pudding like jelly. Then I  added in all my toppings too easy! This is perfect for a quick breakfast if your on the go.

I'm missing summer already and wanted something that tastes like summer! Why not have mojitos in the winter !! This is the best ever it was a huge hit for us this Christmas xo 

Pineapple Mojito 
1 Fresh  Pineapple 
1-2 Shots Malibu Rum 
Fresh Mint 
Pineapple Juice 
1 Fresh Lime 
Club Soda 

Lets Go: 
Cut pineapple into chucks, place about 4 slices into a glass , add a slice of lime & a  few mint leaves.
Then muddle the ingredients, next add rum and 2parts pineapple juice , add ice and top with club soda and stir away, add some more fresh pineapple and play your christmas music  and you are ready to go xo~ 

P.S. Perfect for New Years !!!!

I thought I would make this popcorn for this kids this year,  plus get my husband to read the "The Night Before Christmas Book" 
I seen so many different ideas for this on Pinterest and I thought I would make this for one, this popcorn definitely got the kids there sugar fix !!

I changed it up just a bit I added the mint M&Ms and the Peanut M&Ms

Her book it filled with great Italian recipes that are simple and easy to make ! 
Here is her Nutella Brownies! This was super easy to make  it was only three ingredients!!
If you like Nutella then you will like these they are a  very fudgy, chocolatly brownie they are delightful xo ~

What you will need: 
1 bread baguette
1 clove garlic 
4tbsp Olive Oil 
1 box of Boursin Cheese (garlic/chives)
1 half pomegranate 
3tbsp Fresh Basil chopped (thin slices) 

How To:

Preheat oven 350', next get out a cookie sheet and cut baguette into small slices and brush with olive oil, and toast the  bread in the oven for about 7min or till it is toasted! 

Next slice a clove of garlic in half  and brush it over with the bread, once that is done spread the cheese over each piece of bread and 1tbsp of the pomegranates and garnish with the fresh basil and serve !!! Too Easy and perfect for Christmas xo

We needed something hearty to warm us up why not soup! It's my go to comfort food on a cold day ! 

Enchilada Soup 

You Will Need: 
1 cooked whole chicken shredded 

1 c. Green or Red enchilada sauce 
1 can chopped green chillies 
3 cloves minced garlic 
1tbsp Cumin 
1/2 tbsp red chilli flakes 
1tbsp ginger 
1 1/2 c. Cheddar Cheese 
900ml chicken broth 
1 can black beans 
1/2 c. Quinoa 
1 1/2c. Tomato sauce 
2 tbsp olive oil 
1 yellow onion 
2 tbsp fresh cilantro chopped 
Pinch salt and pepper 
1 fresh lime

Here We Go:
Start to heat up the olive oil in a med. soup pot add onion and garlic , cook till onions are translucent. 

Next add in the stock with tomato sauce, garlic, cumin, red chilli flakes, ginger, black beans,enchilada sauce, chillies, salt and pepper. Bring to a boil and simmer for 10min.
Now take it off the heat let it cool for 10min. You can use a blender or a hand blender , purée the soup. Bring it back to the heat on med. low and add in your shredded chicken and make sure to stir so the soup won't stick to the bottom.
Then add in your quinoa , cilantro and cook for about 15min, once quinoa looks done add in your cheese, cook till cheese is melted then your soup is ready !!
Toppings: Make sure to squeeze fresh limes over top, this is a must !! You then add what ever you like sour cream, hot sauce, tortillas, salsa, avocado, guacamole, corn !

A couple of week's ago I had a girls night in but a diffent girls night where it was a healthy approuch, and it turned out great from homemade facials, getting our nails done, healthy snacks , movie and of course our group of girls loves loves Champagne! Also made some turmeric shots, yes ... no tequila for our girls night it was turmeric shots !!

I have to admit the girls were fantastic about it all, they tried everything and they were great sports !!

I will start with the Turmeric Shots I was watch this cooking show called, "The Real Girls Kitchen" and Haylie Duff is the host and she came up with some great recipes for a girls weekend healthy getaway, so I thought what a perfect idea for a girls night in , she made these shots which is not that bad tasting, and turmeric does so much  for your body, 

*Engery boosting 
*Reduces inflammation
*Fights cellulite 
*Fights fatigue 
*Helps prevent heart disease 

The list goes on !

Turmeric Shots
From: REAL GIRLS Kitchen 

4 Lemons 
1 1/2c. Coconut Water 
1tsp. Cayenne Pepper 
2tsp. Turmeric Root Powder 

Squeeze lemons, in to a martini shaker or jar and mix the rest of the ingredients
I added ice tasted better cold !  

Next for snacks I made dark chocolate dipped strawberries and mandarin oranges with Himalayan sea salt , yes ..yes ...I know not the healthiest thing but whatever..its a girls night and you have to have chocolate ... 
​I took a cookie sheet and lined it with wax paper for the strawberries to go on. Next I melt 1 package of dark chocolate chips and 1tbsp of coconut oil placed it in the microwave for half a minute and mixed till no lumps, then dipped the strawberries into the chocolate and placed it on the wax paper and sprinkled the salt over top and let it sit in the refrigerator till harden. 

​Next on my menu was Apple Nachos !

Sliced 3  Green Apples 
2tbsp chopped Almonds 
2tbsp of Shredded Coconut (toasted is much better)  
Drizzle of chocolate sauce 
Drizzle of Carmel sauce 

Overall it was a great night we all got to catch up had some great laughs and drank some amazing champagne !! Now for a new girls night Idea???

What you need:
1/2 lemon
1/2 grapefruit
Your favorite sweetner (mines honey)
Green tea
Dash of cayenne

​How To:
Steep the tea for 3min, add the citrus juices, honey and cayenne and enjoy~

3tbsp Coconut Oil 
1/2c Popcorn Kernels 
1tbsp Cinnamon 
2tbsp Sugar 
Sea Salt to taste 
~Mix in a small bowl, your cinnamon, sugar and I add 1/2tsp of sea salt mix well and set aside.
In a med. pot  over medium heat add coconut oil once oil has melted pour in your kernels.
Next once your kernels have popped spray with coconut spray or melted butter and mix up popcorn then sprinkle your cinnamon sugar over popcorn and enjoy your movie

They have a beautiful back yard with an amazing garden and best part is this amazing harvest ! 

Today's project is making some grape jam ! Grape jam is the best homemade but anything home made is better, but this jam is time consuming you have to sit there and peel the grape skins off but nothing is wasted u still need to use the skins for the jam ! I promise you will love this recipe !

7lbs of concord grapes = 6cups ( Makes 5 Med. Canning Jars) 
6cups of sugar
Juice of one lemon
1 pkg of Pectin (gelling agent)

Wash all your grapes first, who knows what kind of bugs are hiding in their!!!
In a large pot squeeze the grape pulp in the cooking pot and in a large bowl add the skins.

Pulp in pot and Skins in bowl 
Next bring the pulp to the stove top and simmer for about 5 min. 

Then pour pulp into a strainer with a large bowl underneth and make sure to push the pulp threw the strainer with a wooden spoon and discard the seeds. 
The colour will look very light, but once you add the skins it will be a  beautiful dark purple colour. 

Now pour the juices back into the pot and cook again over simmering heat and add the skins. I then added the sugar 1 cup at a time, make sure to simmer it down for at least 15 min or longer so most of the water evporates out. 

I then add the lemon juice and pectin to the pot,  keep simmering for another 5min. Once that is done you can now start the canning process ! 
All Done !!
<![CDATA[Chicken Baked Brie Sandwich ..]]>Sun, 23 Aug 2015 04:41:57 GMThttp://deliciousfavorites.weebly.com/home/chicken-baked-brie-sandwichWe went out for dinner with some friends at one of our favorite restaurants, and on the menu they had this sandwich which was fantastic, grilled chicken with an amazing baked Bri cheese and  fig chutney we loved it was sweet and savory ! We were craving it at home the other night so I thought I would try to revamp this sandwich !

2 chicken breasts sliced in half
2tbsp Italian Seasoning 
2 slices Brie Cheese 
2tbsp Olive oil
2 Ciabatta buns
Half red onion thinly sliced 
3tbsp Balsamic vinegar
Hand full of baby spinach
Mayo (optional)
Fig Chutney or Garlic aloi

Preheat BBQ or bake in oven 350'.
Slice chicken breast in half and add oil, Italian seasoning and salt and pepper mix all together in a large bowl.
Next grill chicken for 10-15 min , while that is cooking use a small frying pan and cook the onions with 1tbsp of oil and cook till translucent,then add the balsamic vinegar to the onions, cook the onions till the vinegar evaporates. 
Back to the grill grab your bread and lay the chicken on and add brie cheese on top and broil in oven for just a few minutes, make sure you keep an eye on the broil part because the cheese can burn quickly on such  a high heat. 
Then add onions,spinach and  Fig chutney or if you don't like the sweet taste of fig add a garlic aloi, its perfect for this sandwich as well.   Enjoy xo ~

My mother and my grandmother make this soup all the time it's one of my favorite Portuguese soups, Caldo Verde "Green Soup"

I make my soup different then my family makes it and it goes great if you pour a bit of red wine in it or my favourite, add some banana peppers in the soup along with the vinger from the jar of the peppers !!

2tbsp of olive oil
1c. Kale chopped
1tbsp Portuguese pepper paste
1 onion chopped
3 cloves of garlic sliced in half
3 large potatoes peeled and sliced
1  946ml carton of chicken stock
2 Chorizo links chopped into cubes
Salt to taste.

How To:

I like to chop up the chorizo into small cubes and cook them in a frying pan till lightly cooked, then leave it to the side.

In a medium soup pot heat 2tbsp of olive oil along with onion and garlic, cook till onions are translucent.

Next pour in stock along with potaotes, and add salt. Cover and cook till potaotes are soft, then take a hand blender and blend soup, once blended add the chorizo and kale. Cook for another 10min then enjoy.
