My mother and my grandmother make this soup all the time it's one of my favorite Portuguese soups, Caldo Verde "Green Soup"
I make my soup different then my family makes it and it goes great if you pour a bit of red wine in it or my favourite, add some banana peppers in the soup along with the vinger from the jar of the peppers !!
Ingredients:
2tbsp of olive oil
1c. Kale chopped
1tbsp Portuguese pepper paste
1 onion chopped
3 cloves of garlic sliced in half
3 large potatoes peeled and sliced
1 946ml carton of chicken stock
2 Chorizo links chopped into cubes
Salt to taste.
How To:
I like to chop up the chorizo into small cubes and cook them in a frying pan till lightly cooked, then leave it to the side.
In a medium soup pot heat 2tbsp of olive oil along with onion and garlic, cook till onions are translucent.
Next pour in stock along with potaotes, and add salt. Cover and cook till potaotes are soft, then take a hand blender and blend soup, once blended add the chorizo and kale. Cook for another 10min then enjoy.
