Today is my husbands birthday and he wanted the works for breakfast this morning, instead of bacon and eggs I thought of a Portugese egg frittata and it went great with banana peppers on the side!
Ingredients:
1 chorizo thinly sliced
5 large eggs
1 onion slices
2 cloves of garlic minced
1 potato thinly sliced
2tbsp fresh parsley
2 tbsp olive oil
1tbsp Portuguese pepper paste
Preheat oven to 375'. In a cast iron skillet add 1tbsp oil, add the chorizo once cooked transfer the chorizo to a bowl.
Next add in onions, potatoes, and garlic cook till everything is translucent once done add it to the bowl.
Now mix your eggs with 1tbsp of pepper paste and add in parsley, add the remaining oil to the skillet along with the chorizo mixture to the skillet, pour eggs over top you can also add in feta cheese if you like!
Bake for 20-25 min or till done and serve hot !! Enjoy xo
