My mother makes these amazing fish cakes. She would use mash potaotes instead of bread crumbs, and the starch would hold it together quite well . This recipes is great for left over salmon or canned salmon. Here is my version ..
Ingredients:
1 fillet of Cooked Salmon
2 Potatoes (cooked & mashed)
1-2 tbsp Pepper paste ( I use the Portuguese one)
2tbsp fresh parsley
2 eggs
-Super simple shred the salmon and mix all of the ingredients on a large bowl.
-Shape into small patties.
-Cook in frying pan with 2-3 tables of oil, fry for 3min on each side or till cooked !!
-Serve with fresh lemon sprinkle with some more fresh parsley, goes perfect with rice and wine white enjoy ~ xo
