Chopped green onion
1 pkg vermicelli noodles
1pkg cooked shrimp
1pkg round sheet rice paper
Cook vermicelli noodles according to package, once cooked, drain and run cold water over noodles in the strainer. Next place them in a bowl and drizzle with olive oil or any type of oil you prefer and mix well, this helps the noodles from sticking together.
Chop up all your veggies. What I like to do it get a long sheet of wax paper and place all the chopped veggies on top, so you don't need to wash a bunch of small dishes !
Next fill a bowl of warm water and place the rice paper in it for a few seconds and place it on a plate.
Now the fun part the folding! I'm not good at folding these at all you can make them look really nice but I couldn't lol , just make sure you tuck in the sides as you fold! I like to dip these in some sweet chilli sauce or you can try a peanut sauce as well !!
You will have fun making these! I think the next time I make these I will have a girls night with some great music and good wine! You will enjoy these and they are addicting!
