This is really good salad especially for a hot summer day! This salad taste nutty, fresh and sweet !! Perfect as side dish or just simply on its own !
Ingredients:
1c. Quinoa (cooked)
1 chopped red bell
1c. Edamame (peeled)
1c. Dried cranberries
1/2c. Red onion
1/2c. Unsweetened coconut flakes
1/2c. Chopped almonds
Dressing
1/2c. Grapeseed oil
1/4c. Balsamic vinegar
Dash salt / pepper
1tbsp Dijon Mustard (optional)
Very easy to make, grab a large bowl and add all the ingredients except for dressing. Make sure quinoa is cooked and cooled add all the ingredients in and mix .
Mix dressing in a small mason jar and add oil , balsamic , salt and pepper and shake pour the amount you want over salad you can also add dijon mustard 1tbsp to dressing too for extra flavour enjoy ~XO
