The weather has not been that great with all this rain and its been so cold .. We needed something hearty to warm us up why not soup! It's my go to comfort food on a cold day !
Enchilada Soup
You Will Need:
1 cooked whole chicken shredded
1 c. Green or Red enchilada sauce
1 can chopped green chillies
3 cloves minced garlic
1tbsp Cumin
1/2 tbsp red chilli flakes
1tbsp ginger
1 1/2 c. Cheddar Cheese
900ml chicken broth
1 can black beans
1/2 c. Quinoa
1 1/2c. Tomato sauce
2 tbsp olive oil
1 yellow onion
2 tbsp fresh cilantro chopped
Pinch salt and pepper
1 fresh lime
Here We Go:
Start to heat up the olive oil in a med. soup pot add onion and garlic , cook till onions are translucent.
Next add in the stock with tomato sauce, garlic, cumin, red chilli flakes, ginger, black beans,enchilada sauce, chillies, salt and pepper. Bring to a boil and simmer for 10min.
Now take it off the heat let it cool for 10min. You can use a blender or a hand blender , purée the soup. Bring it back to the heat on med. low and add in your shredded chicken and make sure to stir so the soup won't stick to the bottom.
Then add in your quinoa , cilantro and cook for about 15min, once quinoa looks done add in your cheese, cook till cheese is melted then your soup is ready !!
Toppings: Make sure to squeeze fresh limes over top, this is a must !! You then add what ever you like sour cream, hot sauce, tortillas, salsa, avocado, guacamole, corn !
