We went out for dinner with some friends at one of our favorite restaurants, and on the menu they had this sandwich which was fantastic, grilled chicken with an amazing baked Bri cheese and fig chutney we loved it was sweet and savory ! We were craving it at home the other night so I thought I would try to revamp this sandwich !
2 chicken breasts sliced in half
2tbsp Italian Seasoning
2 slices Brie Cheese
2tbsp Olive oil
2 Ciabatta buns
Half red onion thinly sliced
3tbsp Balsamic vinegar
Hand full of baby spinach
Mayo (optional)
Fig Chutney or Garlic aloi
Preheat BBQ or bake in oven 350'.
Slice chicken breast in half and add oil, Italian seasoning and salt and pepper mix all together in a large bowl.
Next grill chicken for 10-15 min , while that is cooking use a small frying pan and cook the onions with 1tbsp of oil and cook till translucent,then add the balsamic vinegar to the onions, cook the onions till the vinegar evaporates.
Back to the grill grab your bread and lay the chicken on and add brie cheese on top and broil in oven for just a few minutes, make sure you keep an eye on the broil part because the cheese can burn quickly on such a high heat.
Then add onions,spinach and Fig chutney or if you don't like the sweet taste of fig add a garlic aloi, its perfect for this sandwich as well. Enjoy xo ~
